Obtain a QUATS test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.

Violations:
  • 0800 - Corrected During Inspection Critical Chicken salad (made in house) noted not being adequately cooled to prevent the growth of harmful bacteria. The chicken salad was date marked 7/6/08. The internal temperature of the chicken salad (stored inside a refrigerator) was 47, 48, 47, & 46 degrees Fahrenheit.
    Cool potentially hazardous foods prepared from ingredients at ambient temperature to 41F or below within 4 hours. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses. Note: the food was discarded by the owner.
  • 0820 A 2 - Corrected During Inspection Critical Roast beef, chicken salad, & sliced tomatoes on the sandwich prep unit cold holding at improper temperatures
    Relocate food to a refrigeration unit that is capable of maintaining food storage at 41F or below. Note: the food was discarded by the owner.
  • 0840 - Corrected During Inspection Critical According to the ""consume by"" date on the prepared ready-to-eat (RTE) ranch & thousand island dressing (made in house) in the refrigerator, the food should have been discarded three ago.
    Discard the food at this time and ensure all prepared RTE food is served, sold or discarded by the ""consume by"" date. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
Comments:
Sanitizer in 3-compartment sink - 100ppm chlorine.
The facility has a written employee health policy when to restrict or exclude sick employees from food prep.
