Comments:
Paperwork Needed: Employee Health Policy, Full Food Supplier List
~No violations observed at time of inspection.~
-Please send copy of Servsafe certification when obtained, food supplier list (name/address), and employee health policy team meeting letter.
*Be sure when doing food prep employees do not wear jewelry except for plain wedding band, use gloves when prepping raw or ready to eat foods (observed glove use).
*Thermometer in beverage air salad prep broken, will replace.
*Dishwasher at 50 PPM.
Comments: Sanitizer quat, kept at 200 PPM, kept elevated, remember at least 6 inches. Be sure to keep all handsinks stocked with towels and other essentials. Lemons changed twice a day, held in frozen containers. Containers are designed to keep lemons cold, never filled up more than halfway. Soup hot wells are not holding foods until lunch. Air filters cleaned once a week. Observed handwashing.

PIC Passed Demonstration of Knowledge Exam.
-Please have employee health policy available by 30 day follow-up.-
This is a follow-up inspection to the pre-opening done on 03/28/08. This inspection is to verify correction of the following:
-Permanent CO-(Obtained)
-Hot water at handsinks reaching 100 degrees Fahrenheit in 15 seconds. (107)
-Refrigeration units adjusted and holding at 41 degrees Fahrenheit or lower. (Sandwich Fridge 1-3 and Bakery 2 Door were fine)
-Sanitizer at 3 Bay fully functional. (Quat at 200 PPM per test kit)
Comments: Hot water for handsinks was off at time of first inspection because switch was flicked on double thermostat to off position. Sanitizer at 3-Vat switch was flicked off as well. Low sanitizer alarm for dishwasher has been installed. Probe placed in salad fridge for time being. Temps are taken online by employees who first do handwashing then use gloves. Probe is stored on line. No prepped food stays in facility more than 36 hours. Salad/sandwich thermometer is behind right door of Sandwich Fridge #2.
