Overall excellent sanitation with good handwashing, good glove use, good food temperatures and storage, with some dishes without leftover labels. Overall good cooling with several items cooled properly and one item not within time and temperature requirements and one item out for use within the cooling time frame. Employee health with mixed to good knowledge, good knowledge of symptoms, with return time discussed, and good knowledge of symptoms - reviewed steps to take if in close contact or diagnosis with reportable diseases. Sanitizer in place that has been used, 200 ppm Cl.
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site)
    Observation: Leftover labels not on some items such as leftover meatloaf in the cooks box made 2 days ago.
    Correction: Discussed labeling with cook, and leftover date labels placed.

Overall very good to excellent sanitation seen. Good food temperatures, storage and labeling - 1 - 2 storage issues corrected during inspection. Overall good no bare hand contact with one instance noted and corrected. Sanitizer present at 200 ppm Cl. Good employee health knowledge. Clean well organized facility.
  • Critical: Hands - Preventing Contamination from Hands* (corrected on site)
    Observation: Bare hands used putting sandwich together.
    Correction: Discussed and gloves used. Provide suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment to handle RTE food to prevent contamination from hands.
  • Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation* (corrected on site)
    Observation: Unwashed lettuce stored in top holding of prep table (not touching but in area of ready to eat foods) and shell eggs stored above u/w vegetables in the walk in refrigerator.
    Correction: Both discussed and corrected. Ensure all items placed in top prep are cleaned before storing and store shell eggs with raw meats such as pork - beef etc.

Good job of keeping food contact surfaces clean. Sanitizer in place. Keep handsinks fully stocked at all times.
  • Utensils - In-Use - Between-Use Storage (corrected on site)
    Observation: Dispensing utensils improperly stored between uses.
    Correction: Store in-use utensils or dispensing utensils in one of the following manners: 1) In the food with their handles above the top of the food and the container. 2) In food that is not potentially hazardous with their handles above the top of the food within containers or equipment that can be closed. 3) On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized every 4 hours. 4) In running water of sufficient velocity to flush particulates to the drain. 5) In a clean, protected location if the utensils are used only with a food that is not potentially hazardous. 6) In a container of water if the water is maintained at a temperature of at least 135°F.

    Observation: In-use utensils improperly stored between use. EHS observed several utensils improperly stored. In use tongs stored on oven door handle. Stored utensils in cylinder, are stored eating end up. Utensils should be stored handle up.

  • Temperature Measuring Devices
    Observation: There was no temperature measuring device located in the Reach-in refrigerators. EHS observed no thermometers present in deli reach-in or glass front reach-in..
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface of the ventilation hood filters has accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Handwashing Cleanser - Availability (corrected on site)
    Observation: Soap and paper towels was not provided at the hand washing lavatory in the frony of house and kitchen. PIC corrected.
    Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
