    Correction: Clean and sanitize food-contact surface of equipment and pans. Discard carbonized pans due to lack of cleanability.

The person in charge shall not employ anyone to work in the food service establishment until they posses a valid food service card.     Observation: The interior surfaces and exterior of the mechanical warewashing machine are soiled with (food debris) that may decrease the effectiveness of the unit.
    Correction: Increase the frequency of cleaning or limescale deposit removal from the interior surfaces of the unit to maintain unit performance.

    Observation: The nonfood-contact surfaces of the following equipment were observed soiled with an accumulation of dust, dirt, food residue, and/or other debris: Outside of cold holding units # 3 and the 4 door prep unit, inside hot hold unit and pipes above Pizza oven.
    Correction: Maintain nonfood-contact surfaces of equipment clean.

    Observation: A food employee failed to wash his or her hands before prepping a pizza. Discussed corrective action with CFM and employee.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task.

    Observation: Unwrapped knives, forks, or spoons stored in container beside drink machine with the handles down and mouth part up..
    Correction: To prevent contamination of the food and lip-contact surface, provide a means of storage where handles are presented to the employee or consumers.
