    Air dry/dry equipment with a single use towel prior to storage.
  • 1570 - Observed a badly torn gasket on the left low boy refrigerator underneath the make table.
    Replace the gasket.
  • 1800 - Observed the outside of pizza pans are badly carbonized/caramelized.
    Clean the pans more frequently.
Comments:
52 foot candles of lighting at prep table, 10 foot candles of lighting in walk-in vault.

Comments:
This is a reinspection for the proper sanitization cycle of the dishmachine (chlorine). This violation has been abated.

Violation: 1700 - Critical Observed 0 ppm of sanitizer (chlorine) being dispersed into the dishmachine.
Set up/use the 3 compartment sink until the dishmachine has been repaired/operating properly (wash, rinse, sanitize, air dry).

    Provide date markings on all foods prepared/kept for 24 hours or more.
  • 3340 - Corrected During Inspection Critical Observed a spray bottle of sanitizer being stored with cup lids on shelving in the service area.
    Store toxic items separate from foods/foods equipment.
  • 0610 - Observed boxes of rotini on the walk-in freezer flooring.
    Store foods a minimum of 6" off flooring.
  • 2000 C - Observed pizza boxes on the rear flooring; boxes of cups on storage flooring.
    Store all single serve items at least 6" off of flooring.
  • 1770 C - Observed sticky residue (labels) on the outside of stainless steel pans located on storage racks (dishwash station).
    Clean the pans more thoroughly prior to storage.
  • 3180 - Observed an accumulation of ice on the walk-in freezer flooring.
    Clean the flooring.
  • 3080 - Observed 2 foot candles of lighting in the walk-in freezer.
    Increase the intensity of the lighting; must be 10 food candles or more.
  • 2890 - Observed an inoperable light bulb in the walk-in freezer. Observed an inoperable light bulb in the hood system, observed two inoperable light bulbs above the oven.
    Replace all of the inoperable light bulbs.
