  • Non-Food Contact Surfaces
    Observation: The nonfood contact surface of various equipment noted in need of cleaning (handles of Traulsen 2 door, around door handles of walk-ins, around door frames at makeline cooler, ice build up in walk in freezer)
    Correction: Clean these areas and increase the regular cleaning frequency.
  • Physical Facilities in Good Repair (repeated violation)
    Observation: Several floor tiles in the area of the walk in cooler door/water heater/manager desk are cracked or loose including the replacement tiles previously installed.
    Correction: Remove the damaged/loose tiles and replace/reinstall as needed.

Dishmachine run twice, tested at approximately 200 ppm cl both runs. Reminder - target for chlorine sanitizer is 50-100 ppm chlorine can continue to use up to 200 ppm.
Maintain the corrected item as corrected. EHS provided facility GM with sanitizer logs. Recommend using to help staff test sanitizer more often.

Correct the above item prior to resuming use of the dishmachine and prior to the follow-up inspection. Note: please increase the cleaning frequency under the 3 vat sink.

    Observation: Wares cycled through the dishmachine are not being sanitized.
    Correction: Discontinue use of the machine until it has been repaired or adjusted to provide 50-100 ppm chlorine for sanitizing and train staff to monitor more frequently.

Note: Damaged area of floor neat water heater/walk in cooler door still not repaired -> condition of floor is still declining - loose tiles are a cleaning and trip hazard - this has been noted on the previous three inspections - correct within 90 days.

    Observation: A food service worker was observed lathering for less than 10 seconds after applying soap to their wet hands.
    Correction: Instruct all food service workers to lather for at least 10 seconds after applying soap to their wet hands prior to rinsing.
  • Critical: Food - Potentially Hazardous Food - Cold Holding*
    Observation: Some foods in the makeline cooler cold holding at improper temperatures.
    Correction: Cold hold potentially hazardous food at 41°F or below.
