Discussed new ingredients with PIC. No significant changes to process have occurred. Different sanitizer buckets used to sanitize raw chicken than used in other areas of restaurant. Employee Health Policy posted in conspicuous area.
Small leak above walk-in cooler entrance. PIC stated that repair is forthcoming once snow melts off roof.

Spoke with PIC about employee health. A policy for employee health is in place.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Sausage cold holding at improper temperatures
    Correction: Relocate all potentially hazardous foods (PHF) to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Critical: Equipment - Food Contact Surfaces and Utensils
    Observation: Ice machine bin obeserved with mildew.
    Correction: Allow the ice to melt and drain from the machine. Wash, rinse, and sanitize the interior of the ice machine to prevent contamination. CORRECT WITHIN 1 DAY.
