No critical violations. Please review employee health with workers. It is flu season. Make sure all know symptoms associated with food borne illnesses and to stay home. I recommend keeping ice bucket off the floor during the filling process.

No critical violations today. The front low boy needs to be serviced since the temp was high. No TCS foods were stored inside. Note: Observed fry basket handled by chicken prep person and then touched by server. This could be a source of contamination. Management to address this and find a way to eliminate this potential contamination. Kitchen was found very organized and clean today.

Rice and beans are now cooled inside walk in freezer. It appears to be manageable. Open drink issue and washing hands has been reviewed with staff. Continue to monitor. Mopsink wall still has mildew. Try harder to remove. You may have to scrub and then repaint surface so it is smooth and easily cleanable. It is unacceptable as it is right now. A NO SMOKING sign is being sought after today. Permit issued.

04/20/2015Follow-up
Green beans, dirty rice and rice found in containers stacked with lids on inside walk in. When asked how long it takes to cool I was not given an answer that has been verified by staff. I recommend venting pans during the cooling process to allow heat to escape and to keep space between the pans for adequate circulation. Management to log the cooling process the next time these foods are prepared and to provide me with this information. Permit expires 4/30/15. Call me for a reinspection.

    Observation: A food employee failed to wash his or her hands before engaging in food preparation, after touching bare human body parts, after coughing, sneezing, eating, after handling soiled utensils or after engaging in any activity which may have contaminated his/her hands.
    Correction: Instruct food employees to clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and during food preparation, as often as necessary to remove soil and contamination and to prevent cross contamination when changing task. Employee was individually spoken to about this.

    Correction: Personal drinks to have lids and straws. For those dealing with raw foods hands are to be washed after drinking.

    Observation: Butter found at 54 F.
    Correction: This to be held at 41 F or below or placed on 4 hour time control. PIC put inside refrigerator.

Post a NO SMOKING sign in conspicuous location. Discussed cooling of cajun rice. Ensure it is cooled from 135 F to 70 F in 2 hours and then to 41 F in 4 more hours. It was found stacked and covered in walk in at 50-59 F. I recommend having ample room for air to circulate and vent covers to make it possible for heat to escape. Employee health was discussed. PIC knew symptoms but worker could not be specific. Please review symptoms with which workers are to stay home. It is flu season. Label salt container.

    Correction: PIC discarded. Maintain 41 F or below.

Complaint received regarding undercooked chicken tenders on 10/24/14 ~2 PM. Tenders are cooked for 3 minutes using a timer on fryer. Two different batches were cooked during my visit. 177F+ was measured on both batches. Manager did not recall receiving a complaint on this date. Prior complaint on beer can tenders that were cooked without being totally thawed resulting in an undercooked product. This was a special run about two weeks ago. Manager corrected problem. Note: Observed worker eating while working. Workers to remove themselves to eat, wash hands before returning to work.

Watch cooling of rice - do not stack pans of cooling product in walk in cooler (does not allow for proper air flow). Consider placing corn butter in refrigerator during non-peak times to help maintain temperature.
