    Observation: Observed wings on the line to be battered between 47-50 degrees.
    Correction: Wings are held cold by an ice bath, raise the water level of the ice bath to maintain proper temperature on the wings.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils* (corrected on site)
    Observation: Observed several dishes and utensils still soiled.
    Correction: Make sure dishes are cleaned thoroughly before putting them away. Have someone go through and reclean dishes.

There is 1 tile missing near the mop sink and the gasket to the drive-thru refrigerator is ripped (Have these repaired).

    Observation: Observed clean pans that were soiled.
    Correction: Make sure all dishes are cleaned thoroughly before being put away.

    Observation: The fry station around the lights, the speed racks and the shelves in the walk-in refrigerator, and the door to the walk-in cooler were soiled.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: The floors under the fry station, the ceiling around the air vents/ metal joints, the walls behind prep areas, and the TVs/menu board were soiled.
    Correction: Clean these items regularly to prevent build-up of food debris and dirt/dust.

Note: Watch cooling of rice (large lexan pan at 61F 3 hours after prep). Do not cover tightly and double stack when cooling. Recommend using a larger pan for ice bath for better ice water contact with the product. Flies noted.

    Observation: Box of magnesol placed on floor of storeroom.
    Correction: Elevate 6 inches. PIC corrected.
  • Critical: Cooling* (corrected on site)
    Observation: Tubs of rice found at improper temperatures inside walk in indicating quick cooling procedures were not followed.
    Correction: PIC discarded rice. This was discussed at length at last inspection. It appears you still have issues with this. I recommend logging cooling temps and time to ensure workers are following proper procedures. This is a critical violation that must be addressed.
  • Plumbing System Maintained in Good Repair (repeated violation)
    Observation: Old sewer line has been covered with foil.
    Correction: Provide a more secure and cleanable cover for line.
  • Physical Facilities in Good Repair (repeated violation)
    Observation: Broken tiles found under left rear wheel of left fryer.
    Correction: Repair.
04/30/2014Follow-up
Post a "No smoking sign" in conspicuous location. PIC was able to identify symptoms associated with possible food related illness. Better hair restraint required for cook and one server. We discussed cooling of rice. Stacked covered pans of cooked rice found with elevated temps but time for cooling had not yet expired. We discussed a better method of cooling. Manager to know exactly how long it takes to cool items within restaurant. I recommend documenting the time/temp during the cooling process so you can verify that your processes are within regulation. Drain flies seen by sewer line behind prep area. Have pest control operator advise. Permit expires 4/30/14. Reinspection required Call for inspection.

    Observation: Unlabeled food containers. (sugar)
    Correction: Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.
  • Food Storage - Clean and Dry Location (corrected on site)
    Observation: Magnesol store uncovered in mop room/cleaner area.
    Correction: This is considered a food and to be stored as a food.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Real butter at 63.5 F.
    Correction: Ice had melted. Butter was returned to refrigerator. We discussed keeping inside refrigerator instead of trying to maintain temp on ice.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Rust on shelf above rethermalizer.
    Correction: Remove rust.
  • Equipment, Utensils, Linens, and Single-Service and Single-Use Articles (corrected on site)
    Observation: Box of single service utensils found on floor by cash register.
    Correction: Elevate 6 inches.

    Observation: Insect control device is located on top of the ice machine where dead insects may be impelled or fall.
    Correction: Install the insect control device away from a food preparation area so that dead insects and insect fragments are prevented from being impelled onto or falling on exposed food, clean equipment, utensils, and linens, and unwrapped single service and single use articles. Exposed food and food-contact surfaces must be protected from contamination by insects or insect parts. Installation of the device over food preparation areas or in close proximity to exposed food and/or food contact surfaces could allow dead insects and/or insect parts to be impelled by the electric charge, fall, or be blown from the device onto food or food-contact surfaces.

    Observation: Less than 10 foot candles of light was noted in the walk in freezer.
    Correction: Provide at least 10 foot candles at a distance of 30 inches from the floor in the walk-in refrigeration units and dry storage areas and in other areas and rooms during periods of cleaning.

    Observation: Floor throughout kitchen has missing tiles and grout. Some broken tiles found as well.
    Correction: District manager stated correction is due April 18.

    Observation: Floor drain in chicken prep is dirty. Freezer walk in floor found dirty.
    Correction: Clean.
