Ensure that the mop sink is used to disposal of mop water. Recommended for annual Health Department permit renewal. Floor drains to be cleaned tonight. Post hand washing signs at hand sinks in four small serving area.

    Clean, dry cardboard boxes may be used to store items that originally come in them. Once original contents are depleted, discard cardboard since it is not cleanable and can be a harborage for insects.
  • 4-501.114 - Corrected During Inspection Critical Quaternary Ammonium sanitizing solution used was not at an acceptable concentration.
    Adjust the sanitizing solution to 200 parts per million or otherwise identified by manufacturer's recommendations. The pump doesn't dispense the same amount of sanitizer each time. Don't rely on it to ensure sanitizer is correct concentration. Always use the test kit to ensure final sink is at the required strength.
  • 4-903.11 - Single service items (styrofoam containers and paper plates) were observed stored unprotected in the kitchen.
    Store single service items in the original protective package to protect from contamination until used.

    CORRECTED AT TIME OF INSPECTION. Label working containers with the common name of its contents. Food containers shall be labeled in a language that is understood by the regulatory authority and by the employee. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.
