Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.

Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized. You may clean and sanitize the small green cutting board and use the other side of it. Don't use the side that has been used.

Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands (2) The container and (3) Exposed food clean equipment, utensils, and linens and unwrapped single-service and single-use articles.

Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
- 3220 - Mops not hung up to air dry.
Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use. Move the mop hanger so that it is above the sink and will drip into it.
Comments:
Good handwashing and glove use. Employee health policy is explained during the hiring process for all employees. No previous violations to follow up on. Please correct the above items within 90 days. thank you.
