Comments:
No violations were noted. Time control is used on pizzas- 4hours. No hold overs on hog dogs or chilli. Pizza is from Little Cesars and chilli is from Wade's. Heat foods to 165 hot hold foods at 135. Must wash -rinse and sanitize all food contact equipment and utensils. Must use gloves and utensils no bare hand contact on ready to eat foods. Keep all single service cups inverted and dispensed from the plastic sleeves. All Food Handlers must in good health. Any food handler with Flu like symptoms must not be working with foods until 72 hours after symptoms are over.

Comments:
Facility is not in operation during inspection. Covered employee health, food prep and service, storage hot and cold, reheating, thermometer use and wash-rinse and sanitize with manager. No hold overs on foods. All foods opened and heated and not served are discarded at the end of each day. Keep Hot foods at 135 and above. Reheat the Wades chili to 165 before hot holding at 135 and above. Keep all cold foods at 41 and below. Use gloves no bare hand contact on ready to eat foods. Pizza from little Ceasars will be under a 3 hour time control..

Violation: 1320 - There was no temperature measuring device located in the refrigerator. Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
Comments:
Please submit written procedures to the Montgomery County Health Department for using time rather than temperature as control of microbes in conjuction with the pizza.
