Repair the refrigerators over the summer to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the units, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

    Alter or replace these items to provide a surface that is free of unnecessary ledges, projections, and crevices.

    Keep handwashing facilities clean and maintained to encourage proper handwashing.
Comments:
Please be sure mops are hung out to dry between uses.

Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent. Please replace bread racks with dunning racks or other smooth, sealed, easily cleanable racks.

  • 1320 - There was no temperature measuring device located in several refrigeration/freezer units along the outside wall.
    Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • 1570 - Repeat Unused or non-functioning equipment not removed from the premises. Delfield 3-door on the line is not functioning.
    Repair or remove any unused or non-functioning equipment from the premises. Also, please replace the kick plate at the base of the adjacent Delfield unit.
  • 2870 - Shelves in the pantry are not easily cleanable.
    Attachments to walls and ceilings shall be easily cleanable. Please paint or seal shelves in pantry.
Comments:
The kitchen looks clean and orderly. The temperature log (for tracking proper heating prior to putting food on the steamtable on line) is GREAT! Keep up the good work.
