Critical: Temperature, Cooking - Raw Animal Foods* (corrected on site) Observation: Observed salmon plated for service with a final internal temperature of 130F.
Correction: Returned to cook to internal temperature of 163F. Cook all seafood to a minimum internal temperature of 145F. Use a metal stem thermometer to verify cook temperatures.
Dishmachine turned temp tape black indicating adequate sanitizing temps were reached. Bar 3rd sink is 50-100ppm Cl- OK. Good hand wash and glove use practices observed. No violation noted during this evaluation.
