Green beans, milk, cheese, cooked macaroni, voluntarily discarded during inspection. Discontinue storing potentially hazardous foods not kept on ice until in the refrigerator until repaired. Repair refrigerator immediately. Cold hold potentially hazardous food at 41F or below to inhibit the growth of harmful bacteria.
Comments:
Overall excellent sanitation. Temperature charts not available. Restart temperature chart. Include refrigerator, freezer, warmer and representative food temperatures from the refrigerator and warmer no less than every 4 hours and representative final cook temperatures each day. Wiping bucket not available, food contact surfaces sanitized before starting work and new buckets made throughout the day. Keep a wiping bucket made for sanitizing food contact surfaces when contaminated and no less than every four hours. Contact office with information regarding refrigeration repairl.
