Overall excellent sanitation noted. Observed good handwashing by several staff members, good glove use, sanitizer in place at 100 ppm Cl, food supplies checked by manager on arrival, frozen foods were frozen, and a sample tray is prepared and kept for 3 days.
*Note: Foods from the Boys and Girls club that meets at the school in the evenings during the school year is stored with foods for the school children in the walk in refrigerator. Foods that are not intended for the school children should be stored completely separate from school foods. Food storage is done on plastic pallets in the walk in refrigerator.
*Suggest: Obtain and use shelves for food storage to:
-Keep food for school children separate from foods for the club
-Properly store foods to prevent any risk of cross contamination
-Store foods for good stock rotation.
Please contact EHS when milk box is repaired.

Inspection conducted for summer program for Boys and Girls Club that includes non-potentially hazardous breakfasts and full lunches.
-Program organized by SE Virginia Foodbank. Inspection conducted with foodbank kids cafe manager and reviewed with site program manager.
-Program started 15 June and ends 14 August. Currently have 15 kids, but normally have 60 children and can have up to 100 children / day.
-Cook works in Franklin City School system, food handler card expires 2/2010.
-All meats are precooked.
-Bagged lunches taken to off site location for some Fridays.
-Food transported in coolers and stored in available refrigeration. Ensure refrigeration is 41 F or below.
-Premade and prepackaged ROP ham, turkey etc. sandwiches part of menu for the Friday lunches. Sandwiches delivered and labeled "Freeze".
*Noted during the inspection sandwiches stored in the walk in refrigerator, vice the freezer. Process should be store in the walk in freezer, and pull to defrost the day before use. Discussed with foodbank kids manager and site program manager about 1 case of sandwiches present > 1 week presents risk of bacterial growth. Case of sandwiches voluntarily discarded. Case present for 6 days placed in the freezer and will be removed on Friday for lunch use.
-Equipment used includes, the right milk box, hot box, steam table, walk in refrigerator, reach in refrigerator and reach in freezers located in the dining area and beginning today the walk in freezer.
-Overall excellent today. Observed good glove use, good handwashing, good food and unit temperature monitoring, sanitizer in place and used, at 100 ppm of Cl. Temperature charts in place, suggest adding the WIR and WIF as well as food temperatures to the temperature chart.

NOTES:
1) Cheeseburgers (hamburger) for meal go from frozen to oven at 9:00 am. Last meal completed at 12:30 pm, 3 and 1/2 hours.
*Hamburger patty final cook temperature checks not done. No thin stemmed (small diameter stem thermometer) "thermocouple" available* Please obtain thermocouple as soon as possible. Requirement for thermocouples stated in updates to VA Food Code, effective 10/07.
*From time hamburgers go through preparation process of placing on buns and cheese is added, item is not temperature controlled. Time can be used as a public health control but the following must be in place:
-Must label food item from the time it is no longer either hot held at 135 or above or cold held at 41 F or below. In this case as soon as burgers leave cooking or hot holding for preparation. Label with time must be on each pan.
-School must have a HACCP plan that addressed time as a public health control and lists items that will use time, as well as all requirements such as when to label and when food must be discarded.
2) Trays are assembled in advance for students to go through line, trays pushed to front open area. Suggest either keep trays back and push forward with each student to prevent contamination or discontinue assembling trays in advance, or install a sneezeshield for area where trays are held.
3) 2 pipes present going from ceiling to the wall in the dry storeroom. Manager uncertain of the use for the pipes. Please check and contact EHS with type of pipes present. (Manager called to inform EHS pipes are vent pipes)
4) No shelving is present in the walk in refrigerator, walk in freezers or dry storeroom. Lack of shelving creates the following food storage problems:
-Staff must walk on pallets where the food is stored. Boxes are then brought into the kitchen and placed on food preparation surfaces, creating contamination issues.
-Food cannot be adequately stored to prevent cross contamination of foods from thawing raw foods. To adequately store foods, raw, frozen foods are placed on the bottom shelf to thaw, with ready to eat foods stored above raw items. Likewise, unwashed fruits and vegetables are stored on bottom shelving separate from raw meats.
-Food cannot be stored for adequate air flow and stock rotation.
Please plan for smooth durable shelving to be installed. If shelving must be installed in stages, order of importance is 1. Walk in Refrigerator 2. Walk in Freezers 3. Dry Storeroom
5) No air gaps present for 2 - 2 compartment sinks, 1 for tableware and 1 for food preparation. Suggest adjusting drains to allow for air gaps and prevent contamination of sinks in case of drainage back ups.
NOTES:
Observed good glove use, good handwashing, sanitizer in place and used, good food storage and overall good food temperatures. Per f/u phone call with manager, milk box repaired within 1-2 days after inspection.

Note Facility awaiting removal of Nelson ice cream chest freezer by Pet. Suggest, bring to the attention of the supervisor for assistance with removal. Facility prepares food that is frozen raw meats, thawed then cooked. Leftover present. **When viewing the walk in refrigerator, observed inadequate space for thawing due to lack of shelving. Discussed with manager, thawing done in left side of reach in refrigerator. This area can be used for thawing without risk of cross contamination, however, area limits amount of meat able to thaw at one time and may limit thawing to one type of meat at a time.** Note single service items stored on counters and inverted crates in the unused dish room. Dishroom pending removal of dishmachine and counters and installation of shelving for storage.
