11/08/08: PIC - Grayson called and left message (upon my request) stating that: Temperatures of sandwich unit #1= 41degrees, unit #2=top, using ice to keep foods cold, bottom= 30 degrees; meat unit #3 = 38 degrees (had a rag in back where fan is).

Notes- Person-in-charge (PIC) passed the foodservice demonstation of knowledge test. Due to the temperature of the 4-dr cooler the potentially hazardous foods (PHFs) were relocated to a properly working cooler & a repair person was on site. Discussed proper cooling temperatures of large batch items (i.e. chili) with kitchen staff. Discussed/recommended Certified Food Manager training for appropriate personnel. If remodeling floor finishes, submit finishing specs. to the Health Department for prior approval.
