This visit was made to conduct a routine food safety evaluation. The Person in Charge was very helpful during the visit. The following issues require attention:
1. Implement an Employee Health Policy that requires all employees to know the Big 6 foodborne illnesses and all reportable symptoms and Certified Food Managers to know when to restrict or exclude sick employees

  • Critical: Employee Health Policy Requirements (corrected on site)
    Observation: Through conversation and/or review of written policy, it was determined that the establishment's employee health policy (EHP) is not compliant with the Food Code because: Manager and employees are not familiar with reportable diseases, symptoms, and restriction and exclusion.
    Correction: Create and implement an EHP that: 1) requires employees to report certain symptoms (vomiting, diarrhea, jaundice, sore throat with fever, or a lesion/infected wound) and illnesses (Norovirus, Hepatitis A, Salmonella Typhi, Salmonella, E. coli, or Shigella)
  • Warewash Machine/ Data Plate/Present/Info/Water Temps/Conveyor Speed
    Observation: Observed no data plate on the warewashing machine.
    Correction: A warewashing machine shall be provided with an easily accessible and readable data plate affixed to the machine by the manufacturer that indicates the machine's design and operation specifications including the: 1) temperatures required for washing, rinsing, and sanitizing, 2) pressure required for the fresh water sanitizing rinse, and 3) conveyor speed for conveyor machines or cycle time for stationary rack machines.
  • Manual Warewash Temp Meas Dev Provided and Readily Accessible
    Observation: No hot water thermolabels provided at bakery dishwashing machine
    Correction: In hot water mechanical warewashing operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the utensil surface temperature

This visit was made to conduct a pre-opening evaluation. The following items require attention:
1. Provide soap and paper towels for the counter hand sink.
2. Waste line for 3-compartment sink does not sufficiently drain into floor sink and shall be repaired to provide proper drainage.
3. Construction company verified sealant for the walk-in coolers to be SEAL HARD, L & M Construction Chemicals which is USDA authorized. At the time of the pre-opening, construction crew validated sealant for the walk-in coolers and curbing through-out food establishment. Floor curbing and the walk-in freezer flooring with the sealant is still absorbing water making it appear to be constructed of an absorbent material. Construction company agrees to put a final white gloss coat to ensure finished surface is of an approved non-absorbent material.
Hot water temperature 112 degrees F.
