Multiuse food contact surfaces shall be accessible for cleaning and inspection: 1. without being dissembled. 2. by disassembling without the use of tools. or 3. by easy disassembling with use of handheld tools such as screwdrivers, pliers, open-end wrenches and Allen wrenches.

Scrape & repaint the section of the under side of the hood vent system to prevent peeling paint from falling onto food below.

    Repair/replace the seal to this chopper so as to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter.

    Clean and sanitize these surfaces for food contact.
  • 2350 ii - Observed that the kitchen hand sink is coming off of the wall bracket and needs to be properly affixed to prevent breakage.

    All refrigeration should be capable of lowering temperatures to< 41 F. Service technician needs to look at this unit as well as the WI Freezer which still appears to be defrosting. {Monitor both of these units for the next 4 hours for temperature change and then take appropriate action of notification}
  • 2700 - The outside dumpster was observed to have a split seam at the bottom which will allow liquid from the garbage to run onto the surrounding area.
    Replace or repair this dumpster.

  • 0820 - Corrected During Inspection Critical Observed that the WI Chill had an ambient air temperature of 53 F. The only potentially hazardous food item in this unit was milk(just delivered) and it had an internal temperature of 45 F.
    Move all potentially hazardous food to another unit and have a service technician repair the unit. {Food was moved to a unit @ 39.4F)
  • 1100 - Observed that the sandwich board to the steam table on both sides of the serving lines can not be disassembled for cleaning.
    Disassemble the board to effectively clean out the crumbs and other food debris that has lodged between the board and the steam table.
  • 1800 - Observed that the hood vent filters over the convection oven and stove were soiled with dust.
    Take these filters down for cleaning by janitorial staff member.
