Supply a thermometer in all refrigeration units.
Comments:
Recommendation: refrain from piling deli meats high on the make table (possibility of being out permitted temperature range-41 degrees/below).

  • 0760 - Corrected During Inspection Critical Chili for hot dogs was 116 degrees in steam table-product had just been heated in microwave and placed into steam table.
    Corrected by finishing heating this commercially prepared chili to 135 degrees and placing it into steam table.
  • 1570 - Sink at coffee station is not sealed to counter top.
    Correct by sealing sink to counter top.
  • 1770 C - Labels on exterior of clean food containers.
    Remove labels when containers are cleaned.
  • 1770 C - Cabinets under sinks are not clean.
    Clean them.
  • 3340 - Corrected During Inspection Critical Spray bottles of cleaners hanging on wire bread racks.
    Corrected by moving spray bottles to designated chemical storage area.

    Store chemicals physically separate from food and utensils.
Comments:
Employess avoid bare hand contact with RTE food. Light intensity ok. "Sani wipes" used in food prep area are <200 ppm quat and are not labeled for use as sanitizer.
