Observation: The nonfood contact surface of the foil lining the refrigerator shelves is not designed or constructed to be easily cleanable. More importantly, it is restricting proper airflow in the refrigerator and thus preventing the unit from adequately cooling it's contents.
Correction: Alter or replace this item to provide a surface that is free of unnecessary ledges, projections, and crevices. Suggestion is to remove the foil to allow for proper airflow.
- Handwashing Lavatory, Water Temperature, and Flow (corrected on site)
Observation: No hot water at the handsink on the cook line. It had been turned off due to the establishment being closed through the holidays.
Correction: Turn water back on. Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens.

Observation: Eggs, ham, scrapple cold holding at improper temperatures. Setting out waiting for the breakfast rush which was already over.
Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria. Don't leave out large portions of food in anticiaption of a rush.
