Comments:
Overall excellent sanitation. Inspection between meal times. Good knowledge. Facility clean and well organized, good food storage to prevent cross contamination, good food temperatures. Facility with new 0-220 F stem thermometer, calibrated. Facility cooks raw hamburger patties, still needs a small diameter stemmed thermometer capable of taking accurate final cook temperatures for thin meats such as raw hamburger patties.

Overall clean and organized facility. Discussed employee health policy, when inmates ill they report to nurse and must be cleared before returning to kitchen. Reviewed foodborne illness symptoms and 5 reportable diseases with cook. Discussed with SGT, facility cooks frozen raw hamburger patties. In addition to thermometers listed above, ensure a thermometer with a suitable small diameter probe is obtained and used to get final cook temperatures for hamburger patties. Cl sanitizer present at 100 ppm. Meal with precooked chicken patties, canned vegetables and instant mashed potatoes prepared at end of inspection and not ready for temperature checks.

Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

Food handlers cards OK. A recent renovation of the kitchen spaces had been accomplished. New work tables have been installed. The renovation has greatly improved the appearance and material conditions of the kitchen, in addition to increasing the amount of work space. Nice job!
