Violations: Comments:
Only looked at cold holding conditions of stored foods. Found cooked noodles @ 46 F inside upper section of Salad Prep/Make unit . Found Horse Raddish @ 42 F in lower section of unit. Still need to get unit colder or have cooked noodles on 'time as a public health control. PIC decided to go with 'time as a public health control and did up a writen policy during the re-inspection. Found Tarta sauce inside Large Walk-in @ 37 F and unit appears to be operating at proper temperature.

April 18, 2008 (Follow-up)


Violations: Comments:
Re-inspection revealed the following: (1) Large W-in cooler was still holding marginal temperature. Found tartar sauce and relish @ 44 F and 43 F respectively. (2) In upper section of Salad Prep/Make Unit found cooked noodles @ 47 F. (3) Cut tomatoes were sitting on the cook-line at 67 F without there being a witten policy on Time as a Public Health Control. (4) Both the Delfield and the Traulsen coolers were operating at adequate temperatures. (5) Did not observe the storing of raw meats over ready-to-eat foods.
The chef/PIC was advised to lower temperature of these cooler units and have a written Time as a Public Health Policy for the tomatoes. The Chef/PIC is to call this office when these matters are corrected/in place.
Will return in 10 days.
