Note: Hot water to the kitchen area is measuring at 108F. Provide at least 110F water to the kitchen area. Currently the hot water heater supplies hot water to the school and kitchen area. The kitchen area should be supplied with a constant hot water temp of 110F. If this can not be maintained due to the one (1) hot water heater, an additional heater may be needed. Facility in excellent condition. Great job.

Handsinks stocked with soap and papertowels. Reviewed HACCP log books for refrigeration and dishwasher. The spray wand on the dishwasher line has been replaced with a longer spray wand. Have this replaced with a shorter spray wand to prevent the wand from hanging below the flood rim of the dishwasher.
