All food temperatures good. Sliced tomatoes use time as control. Foods labled and dated in cooler. No outstanding violations.

There were no previous open violations to follow-up on. No violations observed during this inspection. Critical procedures inspection focused on the following today: handwashing, bare hand contact with ready-to-eat foods, food cooking temperatures, hot and cold holding temperatures, and equipment cleaning and sanitization. Discussed the employee health program and obtaining food from approved food sources with person-in-charge.
