Note: Sanitizer concentration during inspection greater than 200 ppm. PIC made proper adjustment during inspection.

Invoices for chicken and other meats observed during the inspection. Most recent invoice is dated 4/6/09 from HD Foodservice Corp., 600 Northgate Park Drive, Winston-Salem NC 27116.
Dishmachine sanitizer concentration adequate.
Food Bar off/on time records are current; however, not accurate.

1780-E - Ice machine still in need of cleaning; surface of refrigeration units and vent/hood area are clean.
Time sheets for buffet bars observed and satisfactory.
Data plate for dishmachine has not been installed to date; however, documentation from vendor was observed stating the correct wash temperature and sanitizer concentration for the machine. According to PIC, data plate to be installed during next visit from vendor.

Time is currently used as control measure for food buffet bars. Records were available and examined; however not dated. All records are to be dated and retained on site for 30days.
Dishmachine sanitation water was checked and within acceptable concentration range.
PIC was notified of Consumer Advisory requirements becoming effective October 2007. According to PIC, no foods are prepared undercooked.
Date marking, proper heating and reheating procedures could not be adequately assessed during today's inspection; however, proper procedures were discussed with PIC.
