Tile work, wall work is scheduled to be done. Source of water to liquor room is expected Friday (the wall is being cut into). Hood filters being replaced four at a time. Gaskets have been ordered. Continue to clean cookline. Annual permit issued.

    Observation: The door gasket to the pass thru door is in poor repair. Some hood filters are in poor shape.
    Correction: Repair or replace the door gasket in accordance with the manufacturer's specifications.

    Observation: Areas are not maintained in good repair: grout missing around floor drain in expo area, tiles missing in prep cooler, floor tiles in poor repair in thaw cooler, wall in employee men's room is in poor repair, beer walk in floor tiles and coving tiles are in poor repair(water is pooling by door).
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
01/27/2016Follow-up
Some construction has been done. Tile work is expected next Monday. Gaskets have been ordered. Hood filters are being replaced four a month.(Several are still in the wrong direction.) Wheels of cookline equipment have build up as well as behind equipment, side of flat top and under chargrill. These areas to be detailed. Water is pooling in liquor room. Source of water to be found and corrected. This is unnacceptable. Floor grout is missing in many areas. Loss of grout causes pooling of water and cleaning issues in kitchen. Permit expires 1/31/16. A thirty day permit will be issued in order to finish the remaining items. No other extension will be granted. You may call me for a reinspection if items are corrected prior to the 30 day expiration.

    Observation: Bar Star was not at an acceptable level in bar 3-c sink.
    Correction: Bartender drained to correct.

    Observation: Cold drawers on line do not close easily. Metal plate on wall behind chargrill is loose. Handle to Panasonic is missing. Hole in side of single prep sink. At follow up I was told new railsfor cold drawers and handle to microwave have been ordered
    Correction: Repair. Metal plate was secured.
  • Physical Facilities in Good Repair (repeated violation)
    Observation: Floor tile missing under freezer drawer, missing floor tile in WI(pull/produce box), coving by oven, coving behind 3-c prep sink, holes in wall of produce box(seal), rust on door to walk in.
    Correction: Repair. At follow up: coving still needs repair inside thaw box and behind 3-c sink. Thaw box still has holes in the wall. PIC expects this to be completed this week.
01/21/2014Follow-up
These items to be corrected or plans submitted for renovation by 1/31/14. Permit expires 1/31/14. PIC knew symptoms associated with foodborne disease and knew the Big 5 to exclude workers. Discussed slitting vacuum sealed bags of thawed fish. Vacuum sealer is used for cold product resealing.

    Observation: Cutting boards, sharp knives, tomato chopper, onion slicer and lettuce sinner found soiled.
    Correction: Clean and sanitize. PIC pulled all equipment for correction.

    Observation: The following were found dirty and to be cleaned: wheels of fryers, ice scoop holder, dusty vent to reach in, cold well compressor area, drip trays to cookline, thermalizer, liquor shelves.

New gaskets installed today but some are not sealing properly. Person placing dirty dishes into dishmachine to be careful about handling the clean dishes. Hands to be washed. Note: recommend dating foods with prep or open date and not the portion date. Good handwashing observed by wait staff. 150 ppm wiping cloths. 172 degrees wash/194 degrees rinse.

    Observation: Salmon was undercooked (121 degrees).
    Correction: Returned to grill.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Chicken tenders in pull out drawer at 44 degrees. It appeared food was thawing. Unit is a freezer.
    Correction: Front food was removed. Manager to monitor.

Note: observed wait staff wash hands after bussing tables. Good job! New quarry tile floor has been installed in walk-in freezer. Floor in liquor room has been painted. Note: "Keany" produce vacuum seals raw sliced onions. 158 degrees wash/194 degrees rinse.
  • Critical: Cooling* (corrected on site)
    Observation: French onion soup placed in sealed bag and found at approximately 70 degrees in walk-in.
    Correction: This was removed and opened. Discussed reduced oxygen packaging: you must have a HACCP plan to use reduced oxygen packaging. See Section 5-21-870 in Regulations. You can reheat in sealed bags but not store inside bags. Have a definite procedure written on your French onion soup.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: 1. Wings found in bin 37-50 degrees. 2. Grilled/sauteed onions found at 46 degrees, lobster sauce 46 degrees inside left front drawers under grill. All other foods had proper temperatures. Are gaskets tight? Is drawer fully closed?
    Correction: 1. These were removed. Management to monitor use of bin during operating and upon closing. Manager suggested not storing overnight in bin. 2. Management to monitor.
03/21/2013Risk Factor
Follow up inspection to ensure previous violations have been corrected in order to issue permit. The above items still require attention. Drinking be personnel has been discussed. Blue cheese which had a temperature issue is now kept inside drawer. Permit issued - post in public view.

    Observation: Microwave vent on one microwave still in need of cleaning. Wheels and hoses of cook line equipment has grease build up. Drip trays to oven require thorough cleaning.
    Correction: A new cover has been ordered and is due this week. A power wash/steam cleaner is planned to be used this week.

    Observation: Floor in liquor room is in poor repair.
    Correction: PIC stated this will be done by the end of January. Floor and walls in walk-in freezer will have diamond plate installed by next inspection.

Note: remember to date desserts that are TCS. Protect coffee filters. 176 degrees wash/192 degrees rinse. Permit expires 1/31/13, call for reinspection.

    Correction: Personal drinks to have lids and straws per code. All workers to understand what is acceptable. Drinks were discarded.
