Violation: 3180 - Floor under steam table noted in need of cleaning.
All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

    Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
  • 1320 - Corrected During Inspection The temperature measuring device located in walk in freezer is broken and not easily readable.
    Provide an easily readable thermometer so employees can accurately read the thermometer.
  • 1960 - Repeat Metal bins and pans were found stacked while wet after cleaning and chemical sanitization.
    Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.

Comments:
Food handling procedures were observed and found to be appropriate. Gloves were used properly. No bare hand contact with ready to eat foods was seen. All foods in the walk-in cooler were properly covered and date-marked. Frozen foods were being properly dated and thawed in the walk-in cooler. Utensil wash/rinse/sanitize procedures were observed and found to be correct. Sanitizer solution correct. Hot and cold holding temperatures were correct.
