    All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
  • 3220 - Mops not hung up to air dry.
    Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
  • 1570 - The top interior of the upright Deerfield freezer has ice build-up.
    Defrost to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter.
  • 1320 - The temperature measuring device is not visible in the front of the prep line's undercounter refrigerator.
    Relocate the temperature measuring device to the front of the refrigeration unit to properly represent the ambient air temperature.

    Store soiled linens in appropriate receptacles to prevent the contamination of food or food-contact surfaces.

    Clean and sanitize these surfaces for food contact.

  • 2280 - Critical The incounter handsink that was located behind the dining room's customer service counter/cash register area has been removed. ** This prevents routine, easily accesible handwashing by food workers on the side of the service line adjacent to cookline. ***USE OF SERVICE LINE RESTRICTED TO SIDE WHERE OPERATIONAL HANSINK IS CURRENTLY LOCATED.**
    Reinstall handwash lavatory in orginal loacation to allow convenient use by food workers. Prior to installing additional plumbing fixtures the permit holder must apply and gain approval through the necessary regulatory agencies.

Violations discussed with general manager. One of two kitchen handsinks was removed without permission from the Virginia Beach Department of Public Health. The missing handsink is to be reinstalled into above noted counter within 10 days or less. Food service line is restricted to only operate on the side where the current handsink is located until this required item is reinstalled.
