Comments:
In compliance: employee health, discussed policy/procedures; re-therm taco meat, at >190 degrees, good procedure and documentation; cooling left over taco meat, good procedure and documentation. Sanitizer 100-200 ppm sink and buckets. Lighting .80 foot candles, line and prep area.

Comments:
Complaint investigation. Complainant states: in establishment 10-29-06 (Sunday) at 1:30 p.m.-femal employee coughing int ohands and then putting foods into bags without washing hands. Spoke with general manager who remembers incident. Customer at drive thru saw employee cough, inquired if she had a cold. Reviewed procedures for protecting food and hands. All food handlers are using gloves and trained to cough away from food and hands. No coughing observed during this visit. Suggest a review of cough protection with staff.

Comments:
Overall very clean and well operated. Good date/time marking. Glove use observed-satisfactory. Cold and hot holding temps are safe.
