Comments:
Discussed night and morning carry over steps. The items in the warmer at the end of the night are the only items that are not thrown out at the end of the time. They check the temperture to assure it is at the proper hot holding temperature, then cool the item, then place it in the walk-in. The next morning they check to make sure it is 40 or below. Then they reheat to a minimum of 165 F. During the day time not temperture is used for safety.

Comments:
Discussed menu items, flow of food, employee health and hygene, and other concerns. Reviewed previous inspection. the only item still not corrected is the ice forming in the reach in freezer at the back of the walk-in cooler. Discussed bare hand contact will be completely prohibited from ready to eat foods. Utensils such as tongs or single use gloves should be used to handle food that will not be heat treated before giving to a costomer after handling. Thank you.
