Comments:
Fire last night closed facility. Today hood cleaning company will reset system. Electrician will rewire service panel. Fire marshall is expected around 4:00 p.m. OK from Henrico Health Department once Fire Marshall gives his ok.

April 28, 2007 (Other)

Comments:
I received a call at 10:00 from the Fire Department concerning a hood discharge at the establishment. The hood over the meats discharged. All exposed meats and other products in this room must be discarded. All surfaces must be cleaned and sanitized. Hood must be cleaned and brought up to fire code. A reinspection must be done before opening. Restaurant is closed until above work has been done and approved.

March 29, 2007 (Critical Procedures)



Violations:
  • 0220 - Critical Observed employees take bread from bread drawer and eat it in kitchen while working. Saw employees drink from open beverage cups/containers in kitchen.
    Correct by prohibiting eating in kitchen. If employees are allowed to drink beverages while working the beverage must be in a covered cup with a straw and consumed without touching the straw.
  • 0820 - Critical Tabouleh was 57 degrees, tuna 60 degrees at salad bar.
    Keep PHF at 41 degrees or lower. Can use time as control if documented and remained of food is destroyed after expiration.

December 20, 2006 (Routine)

  • 0160 - Critical Observed employees putting on gloves without washing their hands upon returning to work.
    Correct by training all employees to always wash their hands in a handsink in the kitchen with soap and water for 20 seconds or more before putting on gloves and beginning food prep or service.
  • 0480 - Food storage containers for dry bulk ingredients not labeled.
    Correct by labeling containers with common name of ingredients in English and language of employees.
  • 0800 - Critical Observed 2 large containers of shrimp bisque in walk in refrigerator at 53 & 55 degrees. Employee said soup was prepared last night.
    Correct by cooling hot PHF from 135 to 70 degrees within 2 hours by using small container, ice bath, cooling wand, etc. Then finish cooling from 70 to 41 degrees in the next 4 hours.
  • 1960 - Insert for rice cooker is wet inside cooker. Employee put away clean dishes immediately after coming out of dishwasher while they were still wet.
    Allow to air dry before using. Train employees to allow dishes to air dry for approximately 15 minutes before putting them away. Can use paper towel to remove remaining water.
  • 3020 - No soap at bar handsink.
    Provide hand soap.
  • 3045 - No handwash sign at bar or servers handwash sinks.
    Provide signs.
  • 3260 - Employee (used) apron on food storage shelf-2 places.
    Correct by storing dirty linens in dirty linen container and clean linens in designated areas.
  • 3340 - Critical Observed bottle of Windex over clean food containers and bottle of Windex next to snack mix (at bar).
    Correct by storing chemicals below or separate from food and food containers.
Comments:
Note: facility was not open to public at time of this inspection. Therefore no cooking temperatures were taken. Chef did know requirements and did have thermometer.
