Observation: Observed several containers of prepared ready-to-eat (RTE) meat sauce in the walk-in cooler that was not properly dated for disposition. Discussed proper date marking procedures with the PIC
Correction: the PIC date marked the foods correctly.

Observation: The handsink near the warewashing area and the 3-compartment sink are not sealed to the adjoining walls.
Correction: Seal the units to the adjoining walls since they can be exposed to spillage or seepage.

Observation: The nonfood contact surfaces of the following equipment have accumulations of grime and debris: 1) the exterior of the ice machine 2) the top/exterior of the dish machine 3) the exterior of the fryers.
Correction: Clean the surfaces at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.

Observation: The floors throughout the kitchen are in need of cleaning.
Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

Observation: Outer opening of the food establishment is not protected against entry of insects and rodents. Observed large gaps along the handle side, top and bottom of the door.
Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

Discussed with operator: 1. ensure there is a small diameter probe thermometer for taking temperatures of thin foods 2. recommend turning down the temperature of the prep unit to 36'F to 38'F in order to hold potentially hazardous foods at 41'F or lower.

Observation: The chlorine sanitizer concentration level in the dishmachine measured 10 ppm. Operator primed dishmachine - corrected to 100 ppm.
Correction: After cleaning and rinsing of the food-contact surface, the surface shall be effectively sanitized before coming in contact with food and before use. Proper concentration level of chlorine sanitizer is 50 to 100 ppm.

Observation: The Person in Charge could not produce an appropriate food temperature measuring device to verify cooking temperatures of thin foods such as meat patties or fish filets.
Correction: A temperature measuring device with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin foods such as meat patties and fish filets.

Observation: The cavity of the microwave oven is observed soiled.
Correction: Using the manufacturer's recommended cleaning procedure, clean the microwave oven at least every 24 hours.
