Comments:
The grilled chicken in the cold holding unit measured at 83 degrees and is not a violation at this time because it was still within the cooling time and temperature parameters however I suggest the grilled chicken be placed onto a sheet tray or an ice bath method of cooling be used for quicker cooling prior to placing the chicken into the make unit.

Comments:
Replace the missing ceiling tiles over the walk-in freezer once the fire suppression in the walk-in cooler & freezer are installed. Light intensity readings: Walk-in cooler = 15 FC, Walk-in freezer = 14 FC, Food preparation areas = 48 - 68 FC, Food storage area = 50 - 76 FC, Under the ventilation hood = 61 - 64 FC, and in the dishwashing area = 48 - 76 FC. A temporary 30 day Certificate of Occupancy (CO) was issued by the Department of Inspections on 7/8/04. A permanent CO is pending a final approval by the Chesapeake Fire Department. The convection oven was noted during this inspection not to be situated under a ventilation hood system. The Chesapeake Health Department permit to operate a food establishment is granted with the stipulations that all noted observations are corrected, the Chesapeake Fire Department approves the use of the convection oven without being placed under a ventilation hood system, and a permanent CO is issued by the City of Chesapeake Department of Inspections. I will contact the Fire Marshal on the status of the fire suppression system for the walk-in cooler & freezer, and the convection oven as soon as possible.
