    Observation: Fried chicken strips & baked chicken wings hot holding at improper temperatures. Voluntarily discarded.
    Correction: Rapidly reheat the food to 165°F and maintain at 135°F or above through the hot holding period.
  • Critical: Food Contact Surfaces - Cleanability* (corrected on site)
    Observation: The food contact surface of the scoops used to serve the hot sides are not designed or constructed to be smooth and it contains cracks, chips, or pits that can not be easily cleaned. The handles are not designed to withstand the high heat and the plastic is peeling and chipping.
    Correction: Replace the scoops that are designed to withstand the heat.

    Observation: The cutting board(s) along the sandwich prep unit are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition. Recommend using individual cutting boards that are easier to maintain and clean.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.

    Observation: The interior surfaces of the mechanical warewashing machine are soiled with (food debris, limescale) that may decrease the effectiveness of the unit. The outside of the warewashing machine is heavily soiled as well.
    Correction: Increase the frequency of cleaning or limescale deposit removal from the interior surfaces of the unit to maintain unit performance.

    Observation: Corn, chipped beef, and sausage patties noted not being adequately cooled to prevent the growth of harmful bacteria. Relocated and rapidly cooled.
    Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.

    Observation: The methods used for cooling were not adequate (chipped beef and sausage patties had been placed in covered deep container)
    Correction: Cool foods by the following methods: 1. Placing food in shallow pans 2. Separating food into smaller thinner portions 3. Using rapid chill cooling equipment 4. Stirring the food in a container placed in an ice water bath 5. Using containers that facilitate heat transfer 6. Adding ice as an ingredient 7. Any other method that can effectively accomplish cooling.
