Sushi perpared and served daily. Observed Letter of Certification from AFCFC located in Ranco Dominguea, CA (1-310-604-3200). Letter guarantees that seafood has been frozen to -4 degrees F for 7 days. Log book observed documenting time-in/time-out and discard records for seafood department.
Quaternary ammonium used as sanitizer. Concentration tested at 200 ppm.
Discussed employee health policy with PIC.
No violations cited. GREAT INSPECTION!
