Cabinets containing plated food are being left open to provide better air flow to cool the food down after plating to 41 F or below. Plated food is being monitored and is cooling down to 41 F in a short amount of time with cabinet doors opened. Diary cooler display is reading 35 F and manager is closely monitoring temperature graphs. This unit is not in use at this time.

Dairy cooler is above 41 F and has been according to recording temperature chart on computer. Cold hold potentially hazardous food at 41F or below to inhibit the growth of harmful bacteria. Open doors to cabinets to allow for air flow around food. Monitor temperatures of food in trays and food from blast chiller stored in cabinets. Do not store any food in dairy cooler until cooler can maintain food at 41 F or below.

The following need to completed before beginning food operations: all refrigeration units should be set at 37 F so they can hold food at 41 F or below. In pantry G there is no outside display reading on the 3rd refrigeration unit. All refrigeration units in the four pantries need to have interior thermometers in addition to the outside display. All hand sinks must be equipped with soap and paper towels. First light fixture in dairy cooler is still not working and lights over the door in vegetable and meat cooler are not working. These lights need to be working correctly. Replace ice scoop holder since it is cracked on the bottom. Received copy of the temporary certificate of occupancy with an expiration date of 6/16/2009. Please submit a copy of the permanent certificate of occupancy once you receive it. Issue yearly health permit.
