1770 A - Corrected During Inspection Critical There were two knives being stored in a "crack" between the steam table unit, and the steel prep table next to the steam table unit, in the grill area.
Utensils may not be stored in "cracks" between tables and equipment. Because these areas are not easy to keep clean, at the bacterial level. A smooth, cleanable knife rack, or a smooth easy to clean steel bowl or some other type of smooth, cleanable storage box may be used for storage of clean knives. (Soiled knives may not be placed on a knife rack, or in a storage container.) This violation was immediately corrected by the establishment management.
2310 - Corrected During Inspection Critical An employee was dumping out a wipe-cloths sanitizing solution in the kitchen handwashing sink, at the time the inspection was initiated.
The handwashing sinks may not be used for any purpose other than handwashing. We need to do everything possible to encourage frequent, and whenever necessary, handwashing. This violation was immediately corrected by the establishment management.
