The quat sanitizer at the 3 vat sink was good @ 200 ppm. The Health department permit expires this month. Time to apply for a new permit.

    Observation: The nonfood contact surface of the ice deflector has a black residue on it
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soiled residue.

Make sure all food contact surfaces are washed, rinsed, and sanitized at least every 4 hours once you have started using those utensils.
  • Critical: Food Contact with Equipment and Utensils* (corrected on site)
    Observation: Observed employee with metal bracelet on are that were coming in contract with the cutting board where the sandwiches are cut once they are prepared. The bracelets are not clean and sanitized.
    Correction: Use only cleaned and sanitized utensils or equipment during food preparation. Remove jewelry that may come into contact with food contact surfaces. The cutting board needs to be removed, cleaned and sanitized.

Monitor the cooling of foods more closely to include sliced tomatoes, tuna, egg, and chicken salads. Employees were observed changing gloves between tasks. Food equipment was working well. Reportable illnesses is posted for all employees to observe.
  • Cooling Methods (corrected on site)
    Observation: Food containers for cooling food are arranged so as not allow for maximum heat transfer. Container of sliced tomatoes stored with plastic wrap and container pushed in corner of cooler.
    Correction: Arrange the food containers in the refrigeration equipment to provide maximum heat transfer through the container walls. Loosely cover or uncover the food if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food.

The purpose of today's visit was to conduct the first operational inspection since the firm has opened. The quaternary ammonia sanitizer at the 3 basin sink was good @ 200 ppm. Employees were observed handling ready to eat foods with single service gloves. Employees were observed washing hands and changing gloves between tasks. All food temperatures were within the acceptable range. Manager provided information on the big 5 reportable illnesses.

Hot water at faucets were over 100 degrees F. The 3 compartment sink had hot water at 118 degrees F. The hand wash signs and soup dispensers are on site and some have been installed. Finish installing the hand wash signs along with the soap and towels.
Violations: section 3080 : Less than 10 foot candles of light was observed in the walk in cooler and walk in freezer. Provide at least 10 foot candles of light in the walk in units.
The lighting at the meat slicer station has less than 50 foot candles of light. Provide at least 50 foot candles of light where food will be sliced.
Employee health handouts were given to the corporate staff on site to hand to the operator of this facility.

  • Floors, Walls, and Ceilings - Cleanability
    Observation: There is a gap in the floor at the juncture of the hall and toilet rooms.
    Correction: Seal any gaps in the floor to make it smooth and easily cleanable.
  • Toilet Rooms - Enclosed
    Observation: Toilet room door is not provided with a self-closing door
    Correction: Provide a self-closer for the toilet room door. Completely enclosed toilet facilities minimize the potential for the spread of disease by the movement of flies and other insects between the toilet facility and food preparation areas.
