in follow up from the routine inspection conducted on the 10th ...were the internal temperature of the sandwich prep ref, was 45 and the product on the topline was in the upper 40;s to lower 50's ... Advised owner that the unit must be serviced and that as had been documented that the maximum internal temperature was 41 ( as of March 1 , 2007 ) .. Discussed that food needed to be rotated out of the unit every 4 hours and that the date labeling of the product had to be reduced to 4 days . Also that lids are needed to be maintained on the product ( either whole lid panels on the topline or metal or lexan lids on each offering )
The unit is being monitored by service techs.. per family member of owner / CFM they have determined a small coolant leak but cannot determine from which point... The service company has advised owner that if leak cannot be determined then they recommend replacing the unit ( which is old ---12 years )
A Notice of Violation will be sent out 9-25 documenting repeated temperature violations at this unit and that it is either in working order ( maintaining temperature of foods and ambient unit temperature of < 41 or replaced at the end of the year )
