    --Observed mechanical diswasher failing to put out 50ppm chlorine sanitizer, as per the data plate.
  • Equipment in Good Repair & Proper Adjustment (46.671)
    --Linen washer is leaking causing pooled water on the floor.
  • Chemical Sanitization for Mechanical or Manual Warewashing Equipment (46.674(d))
    --Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 10 ppm, and not 50-100 ppm as required. Firm does most warewashing in 3 bowl sink, informed firm to manually sanitize anything put through the dishwasher.
