    --Observed cheese and diced sausage being cold held on a refrigerated bain marie unit with an ambient air temperature of 50 degrees F and internal temperatures of 50 degrees F. Approximately 5 lbs of cheese valued at $15 dollars and 4 lbs of sausage valued at $13 dollars disposed. Corrected on the spot.

    --Equipment not maintained in good repair. Observed potentially hazardous foods (cheese and sausage) being stored inside a refrigerated bain marie unit operating with an ambient air temperature of 50 degrees F.
  • Objective of Cleaning Grease & Soil Accumulations & Nonfood Contact Surfaces (46.711(b)(c))
    --Observed an accumulation of grease on the ansul (fire suppressant) system under the exhaust hood covering the grill and deep fat fryers.
  • Frequency of Cleaning Nonfood-Contact Surfaces (46.714)
    --Observed dust on shelving unit under the microwave oven.
  • Cleaning Ventilation Systems (46.981(d))
    --Observed an accumulation of static dust in the exhaust duct work in the hood installed above and overtop the pizza oven.
