    --Staff using golf tees as stoppers in the pouring spouts of alcohol bottles, as a fruit fly guard. As discussed, the golf tees are NOT food grade and more of an issue is the paint on the tees. PIC removed all during inspection. They make pour spouts with the little caps, more importantly, you need to combat the fruit flies by eliminating breeding areas, decaying organic material, standing / stagnant water. Reviewed practices of flushing ALL drains with boiling water on a regular basis, keep all clean and dry.
  • Cleanability of Multiuse Food-Contact Surfaces & CIP equipment (46.542)
    --The circulating fan on the upper interior panel of "M-Qing Oven" at grill line is rusted and pitted. Replace or remove the fan.
  • Maintenance & Operation of Mechanical Warewashing Equipment (46.675(a)-(c))
    --Need to clean off the top of the dishmachine and counters on either side, remove all the non-food items: fishing lures, golf balls, hardware items, etc.
  • Objective of Cleaning Food Contact Surfaces & Utensils (46.711(a))
    --Buildup of pink slime on ice machine storage bunker deflector panel and plastic harvest plate shield in ice forming chamber, clean / sanitize both as needed.
  • Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
    --Both the upstairs walk-in cooler and the downstairs walk-in freezer have been taken out of service
