    --Observed a 4" inch deep pan full of recently diced tomatoes, jalapeno peppers, onions and cilantro and placed on the serving line immediately after dicing with an internal temperature of 72 degrees F. Fresh tomatoes diced at room temperature then placed on a refrigerated serving line in deep 4" pans could take hours to cool to or below 41 degrees F putting the tomatoes at risk for potentially hazardous bacterial growth. Diced tomatoes are a potentially hazardous food (PHF) and should be diced at night prior to closing then refrigerated overnight inside a reach-in refrigerator to help maintain that PHF at 41 degrees or lower during meal service. Employees on duty move diced tomatoes to smaller pans then refrigerated. Corrected on the spot.

    --Observed broken door gasket on a reach-in refrigerator.
  • Chemical Sanitization for Mechanical or Manual Warewashing Equipment (46.674(d))
    --The quaternary ammonia concentration in the sanitizing solution of the 3-bay warewash sink was 50 ppm, rather than 200 ppm as required. Corrected on the spot.
  • Objective of Cleaning Grease & Soil Accumulations & Nonfood Contact Surfaces (46.711(b)(c))
    --Observed soda syrup spillage inside the cabinets where the bag-in-a-box syrup is stored.
  • Cleanability of Floors, Walls, & Ceilings (46.921)
    --Concrete floors in kitchen and ware washing areas sealed by painting have areas where the paint has peeled and or is missing.
