  • Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
    --Food within the walk-in cooler is about 51 deg. F. According to the PIC, all Potentially Hazardous Food in this unit will be disposed. PIC phoned the Manager, and repairman. Also, she opened the adjacent freezer door, which created an ambient temperature of 38 deg. F. in the cooler portion of the walk-in cooler. The back of the evaporator is nearly completely covered with frozen condensation (frost). This situation may be, in part, due to the high temperatures in of the room housing the walk-in cooler (which was 82 deg. F. today).
  • Cleanability of Multiuse Food-Contact Surfaces & CIP equipment (46.542)
    --Bottom of one (1) can cooler has some rust. Mixers are stored on this surface.
  • Cleaning Ventilation Systems (46.981(d))
    --Ventilation filters in the upstairs kitchen have an accumulation of dried grease (should be cleaned more frequently).
