What will Egypt most likely do if the water coming into them reduces in amount? If they do bomb the dam in Ethiopia, could this trigger a war? Or is this unlikely...

Not possible. FYI, there are actually two Nile Rivers until Omdurman, just north of Khartoum, where the Blue and White Niles join. Even if Ethiopia managed to take all of the water from the Blue Nile, all of the water from the White Nile would continue to flow north to the Mediterranean.

However the Blue Nile's discharge is x2.6 bigger than the White Nile's... 70%(85% claimed) of the water coming through the Nile is coming from Ethiopia, so it possibly could dry out the nile.
