If I'm going to the continent and travelling through all the different regions and countries, I'm going to need some sustenance.

So C-D, for the regions/countries you're most familiar with: if I want to eat the dishes that best represent the different areas, what would they be? Like what's the "go to" meal in Kenya vs. Egypt vs. Senegal etc. Sure I could search this online, but people with first-hand experience will have better insight.

I've been to Kenya so I'd suggest you go to Lake Victoria and enjoy some fried Tilapia with ugali and sukuma wiki.

Also there's a sweet called 'mabuyu', basically chilis and sugar coated in baobab seeds.

Would you consider Kenyan cuisine "spicy?" I love all flavors from savory to sweet to spicy, but haven't really heard much about East African fare outside of Ethiopia.

Ehh...it depends. Most people eat ugali and sukuma wiki along with stews which are mostly bland. For celebrations, Kenyans will go for 'nyama choma' (roast meat), fried fish, chapati, kachumbari etc.. Mostly savoury and some spice especially the last one on the list above.

There's a nice place called Carnivore which I think you should visit. It's a place where you an eat all meat but pretty pricy when I went there.
