ooohhh....I have never tried cooking him cornish game hens....he gets so violently ill on chicken that I don't dare try it...we know he is safe with some turkey and duck. dang i'll just have to make it for guests sometime and give him his red meat! thanks Glitch

I liked the Gunsight mountain area, take the trail up and work my way up toward the gun sight. Just north of Cantwell was pretty productive too.

My recipe for grouse, dry and flatten them, let them sit for awhile in egg, then dredge them in a seasoned flour mixture. Pan fry and then put chicken stock in pan and let a gravy form. Put a slice of white cheese on top of breasts. I like pepper jack.

I love a good pan fried ptarmigan. I dredge the meat in some flour, then some egg, and then a mixture of crushed cracker and seasoned bread crumbs. I fry the meat in some bacon fat at a medium heat in a cast iron skillet until there is a nice golden crust and the ptarmigan is cooked through. Simple but good.
