Why not a combination diner like they have over at EC Phillips in Kethcikan? That place is always busy in the summer. It could be because they serve Filipino food or it's handy for the workers to eat there.

Hmmmmm.....your salmon crepes with dill...maybe with a fresh hollandaise (really rich dish)...and/or berry sauce on the side...

Halibut cut into similar sized pieces...dip in egg wash, then seasoned bread crumbs mixed with grated parmesan...pan fry in olive oil (not sure how baking would do) the bread crumbs with the parmesan and herbs..., this is my new favorite...then a berry sauce or fruit salsa and some rice, couscous, or polenta....

We starved half to death on the island last summer because there was nothing decent to eat short of driving into Craig and going to RA's. There's a little dive down the street here but...besides having bad food they dissed a family member so I guess that means I'll see if I can run them out of business.

There will none of that fancy coffee drink bs going on. Raven's brew with cream and sugar for the wussies and no decalf at all. Plenty of baked stuff as that's my forte.

We know that the business is there even with all the potholes on the road that (supposedly) keeps CC and his kind from snooping around and I do intend to put up a sign with a picture of a donut with a slash through it to keep the rest of the undesirables away.

I'm thinking of a very limited menu to begin with and basically just fixing whatever I feel like but I want a few standard items.
Some kind of soup as a standby or soup of the day, maybe salads, but not sure how readily available good greens are...then special of the day

Some sort of stir fry, once again the veggie availability and cost....I know you aren't fond of BBQ sauce, but grilled salmon with BBQ sauce and rice is killer...

Uh.....great ideas but this thread seems to be about what most locals would like to see. It's pretty well known that locals have a lot of excellent seafood right in their own homes, especially in places like the island so maybe I'll have to learn how to cook chili dogs or some such.
