No, $2K is not worth it in Saratoga. You can get a decent place over in San Diego for that price where the weather is literally perfect and right near the ocean.
The new apartment complexes and lofts are really nice though. But in my opinion they're not worth the price.
There is a pretty big group of people in Saratoga who are in to healthy living/eating and outdoor activities like you stated you enjoy so I think you'll have a lot of luck finding people to do similar activities with. There are a lot of good cycling trails all around the Capital Region. There's one that goes along the Erie Canal all the way to Buffalo I think. Really good trail. There's also shorter ones in Cohoes that I know of. Albany has recently put in new bike lanes too and I'm hoping other local cities follow.
Boating is big on Sacandaga Lake as well as Lake George. There's a boardwalk in Lake George too I believe that's nice. Just be careful because every year there's one or two drunk a-holes that cause someone else bodily harm/death on the lake.
Camping is huge too since you have the Adirondacks right near you and a bunch of other camping sites scattered all around. One of my favorite memories as a kid going camping with friends and walking around aimlessly finding things to do with other kids that were camping there.
If you can't afford Saratoga Springs, consider Glens Falls, Malta, Ballston Spa, or Clifton Park. They all offer easy access to all the major urban areas in the Capital Region via 87 (aka the Northway).
